Honey butter and Tropical Delight sound amazing. :-) Last night I actually tried a brown rice pudding based on your description of it – cardamom compliments the flavors wonderfully.

I haven’t experimented with popcorn too much, largely because we like it just fine plain. I’ll sprinkle on some nutritional yeast sometimes. We use a Whirly Pop, and sometimes I’ll add a bit of brown sugar to the coconut oil after it melts to create a very light caramel kettle corn, and that’s super yummy without being too intense. How do you make your popcorn?

Angeli, ooh that rice pudding would be yummy. Plain is good too, but now that I am in experimenting mode, it is hard for me to leave it plain :) . Nutritional yeast is good and simple. I just use an air popper.

Some of these sound so yummy… and so much healthier than the marshmallow popcorn I’ve been making (it is completely delicious and easy, but not healthy). I will have to try these!

Ugh..the dreaded dinner. I really, really want to be a good cook but to be honest…I’m kinda terrible. I think I get frustrated with my lack of knowledge and resources (until now). So, this is one of my goals is to become better at making yummy dinners. We have bbq’d lately because the weather has been nice. Our go to, easy and quick, are the salmon burgers from Costco. I also just tried Costco’s black bean burgers and I thought it was great! I too like the idea of simple and light dinners. Stan and I both need to lose a few lbs. so I know this will help. Your salad sounds yummy…to bad no TJs around.

I love hearing what other people get at Costco. The black bean burgers sound so good, and I want to see if I can make those from scratch. Do they fall apart on the grill? I have that problem with veggie burgers. Oh, and Chris and I could join your quest to lose a few pounds :)

I admire that you have a plan. I have tried that and it didn’t last very long. I at least try to decide in the morning what’s for dinner that night but that’s as far as I can think ahead.

Dinner Plan

I feel like my dinners have been pretty lame lately. I have a goal this week to be more organized with my meal planning. Hey Kara! I have been trying to do the same thing lately! Now that we don’t live across the street from the grocery store, and I’m working more, I’m trying to cut down on trips to the store by being more organized. And, hopefully save a little money in the process. I was actually thinking of you the other night when I made this: http://tastykitchen.com/recipes/main-courses/creamy-chicken-spaghetti-casserole/ It was easy, tasted good, and made a ton of food. Plus, I have enough chicken left over (it used about half of the bird) to make enchiladas or something else later in the week. If it sounds good to you, I definitely recommend it.

Can you do this every week!? I love getting ideas from other people. I’m not very good at meal planning, but when I do, I’m so glad I did. Denver ‘s gone for work this week, so I have a hard time planning stuff when the kids don’t usually appreciate my meals. So I usually take these weeks to make stuff that I really want and then we usually have breakfast for dinner at least once. By the way, what exactly is yum sauce? i’ve never heard of it.

I’m terrible at meal planning…but it really makes life easier and meal time so much less stressful. Love seeing what’s on your menu. Keep posting them so hopefully it will rub off on me one of these days! So nice running into you at the store last week…did you like how I was lamenting to you about Weight Watchers while carrying around a package of Oreos in my basket??

Ooh… I like the idea of doing this every week. It would keep me organized’ish. The only disappointment to you all will be to see that after a few weeks most things just get rotated. Actually, beans of some form are a weekly occurrence around our house. I love breakfast for dinner, and so do most kids. There is a restaraunt here called “Cafe Yumm” that has yummy sauce. Come and play with us sometime. I think that Judah and Miriam would have fun together. Hey, Oreos aren’t actually that many points are they if you only have a few?? I guess the key is only having a few which is hard for me to do :) . No judgement at all from me…. I can’t think of the last day that I haven’t had some sort of sweet :) .

I usually get home around 4:15, so I have time to get dinner started pretty early. On work days, I usually cook things that are fairly quick, and save more involved dishes for weekends or Mondays (which I have off). My system for planning meals involves a spreadsheet (of course!) with main dishes on the left, and side dishes on the right. The night before I go grocery shopping, I ask Curt if he has any special requests for the week, and then look over my list of meal options to pick out what to do for the week. It really helps me keep a good variety while sticking with things that I know I can do. If I try something new, I usually do it on a weekend so we can order out if we have to!

It would be so fun to see you and Miriam! You’ll have to let me know if you are hosting play time this summer and we will come by! I can’t believe how fast these kids grow…

I LOVE the kids using the measuring spoons! That is SO fun! And the applesauce looks delicious! My three-year-old decided all applesauce is baby food and refuses to eat it. Maybe if we made some she have a vested interest in trying it…
