Dinner Plan

I feel like my dinners have been pretty lame lately. I have a goal this week to be more organized with my meal planning. Here is what my plan is for the week:

Monday-Indonesian Chicken


This recipe is really easy, and I just serve it with steamed veggies and rice.


Tuesday-Szechuan Noodles


Wendesday-Chicken Enchiladas

I don’t follow a recipe for my enchiladas. I mix chicken, black beans, cream cheese, olives, green onions, green chilis, and some taco seasoning from trader joes together. I use the salsa verde from trader joes as the enchilada sauce and sprinkle cheese on top. I top with salad greens, avacados, salsa, and sour cream.

Thursday -Yum Bowls

I use leftover black beans and rice topped with olives, green onions, chicken, cheese, sour cream and yum sauce (I buy the yum sauce at market of choice).

Friday-Lentil Soup


This recipe is so good. Soup is even better the next day.

That is all I have planned so far. I will probably do something slackerish on Saturday like frozen ravioli with pesto.

Hey Kara! I have been trying to do the same thing lately! Now that we don’t live across the street from the grocery store, and I’m working more, I’m trying to cut down on trips to the store by being more organized. And, hopefully save a little money in the process. I was actually thinking of you the other night when I made this: http://tastykitchen.com/recipes/main-courses/creamy-chicken-spaghetti-casserole/ It was easy, tasted good, and made a ton of food. Plus, I have enough chicken left over (it used about half of the bird) to make enchiladas or something else later in the week. If it sounds good to you, I definitely recommend it.

Can you do this every week!? I love getting ideas from other people. I’m not very good at meal planning, but when I do, I’m so glad I did. Denver ‘s gone for work this week, so I have a hard time planning stuff when the kids don’t usually appreciate my meals. So I usually take these weeks to make stuff that I really want and then we usually have breakfast for dinner at least once. By the way, what exactly is yum sauce? i’ve never heard of it.

I’m terrible at meal planning…but it really makes life easier and meal time so much less stressful. Love seeing what’s on your menu. Keep posting them so hopefully it will rub off on me one of these days! So nice running into you at the store last week…did you like how I was lamenting to you about Weight Watchers while carrying around a package of Oreos in my basket??

That recipe looks totally delish and like something I would try. Thanks! With your work schedule, do you always cook when you get home or do you try to prepare parts of dinner before so you can whip it together? I miss you and Naomi. Your chubby babe is longer a babe!
Ooh… I like the idea of doing this every week. It would keep me organized’ish. The only disappointment to you all will be to see that after a few weeks most things just get rotated. Actually, beans of some form are a weekly occurrence around our house. I love breakfast for dinner, and so do most kids. There is a restaraunt here called “Cafe Yumm” that has yummy sauce. You are actually getting enchiladas on wed if that works for you. Audra more than anyone could tell you what kinds of foods I cook, since she i part of my dinner club. I need to do a post about dinner club!
Come and play with us sometime. I think that Judah and Miriam would have fun together. Hey, Oreos aren’t actually that many points are they if you only have a few?? I guess the key is only having a few which is hard for me to do :). No judgement at all from me…. I can’t think of the last day that I haven’t had some sort of sweet :).

I usually get home around 4:15, so I have time to get dinner started pretty early. On work days, I usually cook things that are fairly quick, and save more involved dishes for weekends or Mondays (which I have off). My system for planning meals involves a spreadsheet (of course!) with main dishes on the left, and side dishes on the right. The night before I go grocery shopping, I ask Curt if he has any special requests for the week, and then look over my list of meal options to pick out what to do for the week. It really helps me keep a good variety while sticking with things that I know I can do. If I try something new, I usually do it on a weekend so we can order out if we have to!

It would be so fun to see you and Miriam! You’ll have to let me know if you are hosting play time this summer and we will come by! I can’t believe how fast these kids grow…

I second the request that you do this every week. You KNOW I have a hard time planning new things, so it’s helpful to see what’s for dinner at your house!
