Scottish Oats with Stewed Pears and Apples

I have cooked a lot of rolled oats and steel cuts oats, but I have to admit that this was my first time ever cooking Scottish Oats (Camas Country Mill). I am now in love with Scottish oats now. They are extremely hearty but have a bit of a fluffier consistency than steel cut oats. With school starting tomorrow, I am a little worried about having time to get a healthy breakfast into my kid’s bellies when time will be limited.

Like many families, we often do cold cereal in the morning, because I haven’t allowed enough time to make a more filling and nutrient rich breakfast. To address this time issue, I am going to start doing some breakfast prep the night before. The last two nights, I have cooked the Scottish Oats and at the same time separately simmered apples, pears, cinnamon, and vanilla…. all while doing dishes. I was in the kitchen cleaning already, so it took very little extra effort to prepare breakfast for the next day. Each morning, we have just heated the food up quickly and added milk. I am excited to try some of our other breakfast options, but this was a homerun (I’m going to try it with peaches as well)!
